    Prepare the Steaks

    Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.

    Season the Steaks

    Generously season both sides of the steaks with salt and black pepper.

    Grill the Steaks

    Preheat the grill to high heat. Brush the grill grates with olive oil to prevent sticking. Place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for 5 minutes.

Sauce au Poivre

    Melt the Butter

    In a medium saucepan over medium heat, melt the butter. Add the chopped shallot and sauté for about 2-3 minutes until softened.

    Add Peppercorns

    Add the green peppercorns and cook for an additional minute, stirring occasionally.

    Flambé with Cognac

    Carefully add the cognac to the pan. If desired, ignite the cognac using a long lighter to flambé. Allow the flames to subside.

    Add Cream and Season

    Stir in the heavy cream, salt, and freshly cracked black pepper. Bring the sauce to a simmer and cook for about 5 minutes until it thickens slightly.

Grilled Prawns

    Marinate the Prawns

    In a bowl, combine the prawns, minced garlic, lemon juice, olive oil, salt, and black pepper. Mix well and let marinate for about 15 minutes.

    Grill the Prawns

    Preheat the grill to medium-high heat. Thread the marinated prawns onto skewers. Grill the prawns for about 2-3 minutes on each side until they are pink and opaque.
