    Prepare the Steak

    Take the filet mignon out of the refrigerator and allow it to come to room temperature for about 30 minutes. This will ensure even cooking.

    Season the Steak

    Generously season both sides of the filet mignon with salt and black pepper. Use your fingers to press the seasoning into the meat.

    Heat the Pan

    In a cast-iron skillet or heavy-bottomed pan, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Place the filet mignon in the hot skillet. Sear for about 4-5 minutes on one side, without moving it, until a golden crust forms.

    Flip and Add Aromatics

    Flip the steak using tongs. Immediately add the butter, rosemary sprig, and smashed garlic cloves to the pan.

    Baste the Steak

    While the steak cooks for another 4-5 minutes for medium-rare, tilt the pan slightly and use a spoon to baste the melted butter over the steak continuously.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C).

    Rest the Steak

    Once cooked, transfer the filet mignon to a plate and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute.

    Slice the steak against the grain and serve with your favorite sides.
