    Prepare the Steak

    Remove the cowboy ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes. This allows the meat to cook more evenly.

    Season the Steak

    Pat the steak dry with paper towels. Rub olive oil all over the steak, ensuring it is well coated. Generously season both sides with kosher salt, black pepper, and garlic powder. Sprinkle fresh rosemary over the steak and press it gently into the meat.

    Preheat the Grill or Skillet

    Preheat your grill to high heat (about 450-500°F) or heat a cast-iron skillet over medium-high heat on the stovetop.

    Cook the Steak

    Place the seasoned steak on the hot grill or skillet. Cook for about 6-7 minutes on one side without moving it. Flip the steak and cook for another 6-7 minutes for medium-rare, adjusting time for desired doneness.

    During the last few minutes of cooking, add butter to the pan or on the grill and baste the steak with it. Sprinkle lemon zest over the steak while basting.
