Dough

Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour and salt.

  2. 2

    Add Butter

Cut the unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  3. 3

    Incorporate Water and Egg Yolk

Gradually add the cold water and the egg yolk to the flour mixture. Mix until the dough comes together.

  4. 4

    Chill the Dough

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Cook the Beef

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent. Add the ground beef, cooking until browned.

  2. 6

    Add Vegetables and Spices

Stir in the green bell pepper, cumin, paprika, salt, and pepper. Cook until the bell pepper is tender.

  3. 7

    Mix in Eggs and Olives

Remove from heat and mix in the chopped hard-boiled eggs and black olives. Allow the filling to cool slightly.

Assembly and Baking

  1. 8

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 9

    Roll Out Dough

On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into circles, about 5-6 inches in diameter.

  3. 10

    Fill and Seal Empanadas

Place a tablespoon of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape. Press the edges to seal, using a fork to crimp the edges.

  4. 11

    Bake Empanadas

Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with egg wash (optional) and bake for 25-30 minutes or until golden brown.
