Prepare Seasonal Fruits

Wash and slice the seasonal fruits as needed. Mix with granulated sugar and let it sit for 15 minutes to release juices.

Make Fruit Compote

In a saucepan, combine the prepared fruits and sugar over medium heat. Cook until the fruit is soft and syrupy, about 10 minutes. Let cool and set aside.

Prepare Dessert Base

In a bowl, cream together softened butter and powdered sugar until fluffy. Add vanilla extract and mix well.

Prepare Scone Dough

Preheat the oven to 400°F (200°C). In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in heavy cream until combined.

Shape and Bake Scones

Turn the dough onto a floured surface and knead gently. Pat into a circle about 1 inch thick and cut into wedges. Place on a baking sheet and bake for 15-20 minutes until golden.

Serve with Clotted Cream and Preserves

Once cooled, serve scones with clotted cream and fruit preserves.

Prepare Cream Cheese Spread

Mix cream cheese with fresh dill and mustard until smooth.

Assemble Sandwiches

Spread the cream cheese mixture on half of the bread slices. Layer with cucumber slices, smoked salmon, or egg salad. Top with remaining bread slices and cut into quarters or triangles.

Boil water in a kettle. Add black tea leaves or bags to the water and steep for 3-5 minutes.

Strain the tea into cups. Add milk and sugar to taste. Serve hot or over ice for iced tea.
