Sandwiches
1. Prepare Cucumber Sandwiches
Thinly slice the cucumber and set aside.
2. Make Cream Cheese Spread
In a bowl, mix cream cheese with chopped dill until well combined.
3. Assemble Sandwiches
Spread the cream cheese mixture on 4 slices of white bread. Layer the cucumber slices on top and cover with the remaining bread slices. Cut into quarters.
4. Prepare Smoked Salmon Sandwiches
Spread cream cheese on another 4 slices of bread, add smoked salmon, and top with another slice of bread. Cut into quarters.
Scones
5. Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, and salt until well combined.
6. Add Butter
Cut the unsalted butter into small pieces and rub it into the flour mixture with your fingertips until it resembles breadcrumbs.
7. Add Sugar and Milk
Stir in the sugar, then gradually add the milk, mixing until a soft dough forms.
8. Shape and Bake Scones
Turn the dough onto a lightly floured surface, knead gently, and pat into a 2.5 cm thick round. Cut out scones using a cutter and place on a baking tray. Bake in a preheated oven at 200°C (400°F) for 12-15 minutes or until golden brown.
