Method

Crème Preparation

  1. 1

    Brew the Chamomile Tea

In a small saucepan, bring 2 cups of water to a boil. Add chamomile tea bags and steep for about 5 minutes. Remove from heat and let cool slightly.

  2. 2

    Blend the Crème Base

In a blender, combine the steeped chamomile tea, ripe bananas, coconut milk, vanilla extract, and honey or maple syrup. Blend until smooth and creamy.

  3. 3

    Chill the Mixture

Transfer the blended mixture to a bowl or container and refrigerate for at least 1 hour to allow the flavors to meld and the crème to firm up slightly.

Caramel Preparation

  1. 4

    Make the Caramel

In a medium saucepan over medium heat, combine brown sugar and unsalted butter. Stir until melted and bubbly, about 2-3 minutes.

  2. 5

    Add Cream and Salt

Slowly whisk in the heavy cream until fully combined. Add a pinch of sea salt and let it simmer for an additional 3-5 minutes until it thickens slightly. Remove from heat and allow to cool.

Assembly

  1. 6

    Serve the Sweet Banana Crème

Spoon the chilled banana crème into serving bowls or cups. Drizzle warm caramel over the top before serving. Optionally, garnish with shredded coconut or banana slices.
