    Season the Steak

    Pat the flat iron steak dry with paper towels. Season both sides generously with salt and black pepper.

    Cook the Steak

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for 5 minutes before slicing.

    Cook the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.

Roasted Tomato

    Prepare the Tomatoes

    Preheat the oven to 400°F (200°C). Cut the Roma tomatoes in half and place them on a baking sheet. Drizzle with 1 tablespoon olive oil, and season with salt and pepper.

    Roast the Tomatoes

    Roast the tomatoes in the oven for 20-25 minutes, or until they are soft and slightly caramelized.

Chimichurri

    Make the Chimichurri

    In a bowl, combine the chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well and set aside to let the flavors meld.

Crispy Potatoes

    Prepare the Potatoes

    In a pot, boil the baby potatoes until fork-tender, about 15 minutes. Drain and let cool slightly.

    Crisp the Potatoes

    In the same skillet used for the steak, heat 3 tablespoons of olive oil over medium-high heat. Add the boiled potatoes, smashing them gently with a fork. Season with salt, black pepper, and rosemary. Fry until crispy and golden, about 5-7 minutes.
