Prepare the Fruits

Wash the fresh peaches and apples under running water. Remove the peach pits and cut the peaches into small slices. Core the apples and chop them into bite-sized pieces.

Prepare the Lemongrass

Trim the ends of the lemongrass stalks and remove the tough outer layers. Chop the tender part of the stalk into small pieces.

Combine Ingredients

In a medium saucepan, combine the sliced peaches, chopped apples, chopped lemongrass, honey, sugar, and water.

Cook the Mixture

Bring the mixture to a gentle boil over medium heat, then reduce to a simmer. Let it cook for about 15-20 minutes, stirring occasionally until the fruits soften and the flavors meld together.

Serve the Peachy Keen

Remove from heat and let cool slightly. Serve warm as a fruit compote over pancakes, yogurt, or ice cream, or let it cool completely and store in the fridge for later use.
