Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

  1. 2

    Prepare the Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, and carrots. Halve the cherry tomatoes and cut the broccoli into florets.

Sauce Preparation

  1. 3

    Make the Garlic Sauce

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Combine Ingredients

  1. 4

    Add Vegetables

Add the chopped vegetables to the skillet with the garlic and sauté for about 5-7 minutes until they are tender but still crisp.

  2. 5

    Mix with Pasta

Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together to combine and heat through.

  3. 6

    Season and Serve

Season with salt and black pepper to taste. Sprinkle the grated Parmesan cheese over the top and toss again. Serve warm.
