    Cook the Bacon

    In a medium skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove the bacon from the skillet and place it on paper towels to drain excess fat.

    Sauté Spinach and Onions

    In the same skillet, with a little bit of the bacon fat left, add the confit pearl onions and sauté for 2 minutes. Then add the fresh spinach and cook until wilted, about 1-2 minutes. Season with salt and black pepper.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together until well combined. Add a pinch of salt and pepper to the eggs.

Cooking the Omelet

    Heat the Skillet

    In the same skillet, add 1 tablespoon of olive oil and heat over medium-low heat.

    Add Eggs

    Pour the whisked eggs into the skillet, making sure they cover the bottom evenly.

    Add Filling

    As the eggs begin to set, sprinkle the sautéed spinach and onions, crumbled bacon, and feta cheese evenly over one half of the omelet.

    Fold the Omelet

    Once the edges start to lift and the bottom is golden (about 3-4 minutes), carefully fold the omelet in half over the filling.

    Finish Cooking

    Let the omelet cook for another minute to ensure the inside is cooked through. Slide the omelet onto a plate.
