    Prepare the Herbs

    Rinse the lemon verbena, lavender, and sage leaves under cold water to remove any dirt or impurities. Pat them dry with a clean kitchen towel.

    Zest and Juice the Lemon

    Using a microplane or zester, carefully zest the lemon to get 1 tablespoon of lemon zest. Then, cut the lemon in half and squeeze to extract 1 cup of lemon juice.

Cooking

    Infuse the Water

    In a medium saucepan, bring 4 cups of water to a boil over medium-high heat. Once boiling, remove from heat and add the lemon verbena, lavender, and sage leaves. Cover the saucepan and let it steep for 15-20 minutes.

    Strain the Mixture

    After steeping, strain the herbal infusion through a fine mesh sieve into a large bowl to remove the herbs. Discard the herbs.

    Combine the Ingredients

    Add the lemon juice, lemon zest, and honey to the strained herbal infusion. Stir well until the honey is completely dissolved.

Serving

    Serve the Beverage

    Serve the Lavender Citrus Sage mixture over ice in glasses. Garnish with a sprig of sage or a few lavender flowers if desired. Enjoy!
