    Juicing the Key Limes

    Cut the key limes in half and juice them using a citrus juicer. Strain the juice to remove any seeds or pulp, and set aside.

    Preparing the Ginger

    Peel the fresh ginger root using a vegetable peeler or the edge of a spoon. Grate the ginger using a microplane or fine grater to yield approximately 2 tablespoons of grated ginger.

    Making the Syrup

    In a saucepan, combine the grated ginger, organic cane sugar, and water. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar dissolves completely. Once boiling, reduce the heat and let it simmer for about 10 minutes to allow the ginger flavor to infuse.

Combining Ingredients

    Mixing the Key Lime Juice

    Remove the saucepan from heat and let the ginger syrup cool slightly. Once cooled, strain the syrup through a fine mesh sieve into a mixing bowl to remove the ginger pieces.

    Adding Key Lime Juice

    Add the freshly squeezed key lime juice to the ginger syrup in the mixing bowl. Stir well to combine all the flavors.

    Refrigerate the mixture for at least 1 hour to chill it thoroughly before serving.

    Serve the Key Lime Ginger in chilled glasses over ice. Garnish each serving with fresh mint leaves and a lime wedge on the rim of the glass.
