Salmon

Seasonal Vegetables

Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, garlic powder, salt, black pepper, and fresh dill if using. Mix well.

  2. 2

    Coat the Salmon

Place the salmon fillets in the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Chop the Vegetables

Slice the zucchini and bell pepper into strips. Trim the ends off the asparagus.

  2. 4

    Season the Vegetables

In a mixing bowl, combine the chopped zucchini, bell pepper, and asparagus. Drizzle with olive oil, salt, and black pepper. Toss to coat evenly.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 6

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for 5-6 minutes on each side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.

  3. 7

    Grill the Vegetables

While the salmon is grilling, place the seasoned vegetables on the grill. Grill for about 4-5 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 8

    Plate the Dish

Remove the salmon and vegetables from the grill and let them rest for a couple of minutes. Serve the grilled salmon alongside the seasonal vegetables.
