Method

Caviar Preparation

1

Chill the Caviar

Place the Siberian caviar in a small serving bowl. Fill a larger bowl with ice and set the smaller bowl on top to keep the caviar chilled.

2

Prepare the Garnishes

Finely chop the chives and set aside. Cut the lemon into wedges for serving.

3

Prepare the Blini

If using store-bought blini, warm them slightly in a dry skillet or the oven. If making from scratch, prepare your favorite blini recipe and cook them until golden brown.

4

Assemble the Dish

On each blini, add a dollop of sour cream. Top with a small spoonful of caviar, a sprinkle of chopped chives, and a few pieces of finely chopped red onion.

5

Serve

Arrange the assembled blinis on a platter with the chilled caviar, lemon wedges, and extra chives on the side for guests to garnish to their liking.
