Preparation
- 1
Prepare the Lemongrass
Remove the tough outer layers of the lemongrass stalk and chop the tender part into small pieces.
- 2
Prepare the Fruits
Rinse the fresh blueberries under cold water and drain. If using a whole pomegranate, cut it in half and gently tap the back to release the seeds.
Cooking
- 3
Infuse the Water
In a saucepan, bring 4 cups of water to a boil. Add the chopped lemongrass and simmer for about 10 minutes to allow the flavors to infuse. After simmering, strain the mixture to remove the lemongrass pieces.
- 4
Sweeten the Mixture
Stir in 2 tablespoons of honey to the warm lemongrass-infused water until fully dissolved.
Assembly
- 5
Combine the Ingredients
In a large pitcher, combine the fresh blueberries and pomegranate seeds. Pour the sweetened lemongrass-infused water over the fruits.
- 6
Chill and Serve
Stir gently to mix, then refrigerate for at least 1 hour to chill. Serve over ice if desired.
