Fish Preparation

    Prepare the Fish

    Rinse the Royal Dorado fish under cold water and pat it dry with paper towels. Make three diagonal cuts on each side of the fish to help it cook evenly.

    Season the Fish

    Drizzle olive oil over the fish and rub it all over, including inside the cavity. Squeeze the juice of half a lemon over the fish and season generously with salt and black pepper. Insert garlic cloves and sprigs of parsley into the cavity.

    Prepare the Vegetables

    Cut the zucchini into thick rounds and slice the red onion into wedges. In a large bowl, combine cherry tomatoes, zucchini, and red onion. Drizzle with olive oil, season with salt and pepper, and toss to combine.

    Roast the Vegetables

    Spread the vegetable mixture on a baking sheet in a single layer. Roast in a preheated oven at 400°F (200°C) for about 20-25 minutes or until the vegetables are tender and slightly caramelized.

Cooking the Fish

    Cook the Fish

    Preheat the grill to medium-high heat. Place the seasoned fish on the grill and cook for about 6-8 minutes on each side, depending on thickness, until the flesh is opaque and flakes easily with a fork.

    Serve

    Once the fish is cooked, remove it from the grill and let it rest for a few minutes. Serve with the roasted vegetables and lemon wedges on the side.
