    Clean the Fish

    Rinse the Aegean Bronzino under cold water, then pat it dry with paper towels. Make sure to remove any scales and internal organs if not already done.

    Season the Fish

    Sprinkle the kosher salt generously inside the cavity of the fish and over the skin. Ensure it's evenly coated for proper seasoning.

    Prepare the Herb Mixture

    In a bowl, combine the chopped parsley, dill, thyme, and minced garlic. Mix well to create an herb mixture.

    Stuff the Fish

    Stuff the cavity of the fish with the herb mixture and squeeze the juice of half the lemon inside before placing the other half inside the cavity.

Cooking

    Preheat the Grill

    Preheat your grill to medium-high heat, about 375°F (190°C).

    Oil the Grill Grate

    Before placing the fish on the grill, brush the grill grate with olive oil to prevent sticking.

    Grill the Fish

    Place the whole fish on the grill. Cook for about 6-8 minutes on each side, or until the skin is crispy and the fish is cooked through (internal temperature should reach 145°F or 63°C).

    Rest the Fish

    Once cooked, remove the fish from the grill and let it rest for about 5 minutes before serving.

Serving

    Transfer the grilled fish to a serving platter. Drizzle with extra virgin olive oil and serve with lemon wedges on the side.
