Prepare the Cucumber
Wash the cucumber thoroughly. Peel the skin if desired. Cut the cucumber in half lengthwise and scoop out the seeds with a spoon. Grate the cucumber using a box grater or food processor.

Drain the Cucumber
Place the grated cucumber in a clean kitchen towel or cheesecloth. Squeeze out the excess moisture to prevent the tzatziki from becoming watery.

Chop the Red Onion
Finely chop the red onion. If the flavor is too strong, you can soak it in cold water for 10 minutes and then drain it.

Mix Ingredients
In a mixing bowl, combine the Greek yogurt, drained grated cucumber, chopped red onion, lemon juice, and dill. Mix well until all ingredients are evenly incorporated.

Adjust Seasoning
Taste the tzatziki and add salt and pepper to taste. Mix again to combine.

Chill
Cover the tzatziki and refrigerate for at least 30 minutes to allow the flavors to meld.

Spoon the tzatziki into a serving bowl. Garnish with olives if desired and serve with pita bread or fresh vegetables.
