Filling Preparation

    Prepare the Cheese Mixture

    In a mixing bowl, crumble the feta cheese and add the ricotta cheese. Mix them together until well combined.

    Add Eggs and Seasoning

    Crack the eggs into the cheese mixture and stir in the fresh thyme and black pepper. Mix until smooth and set aside.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Phyllo Dough

    Melt the butter in a small saucepan. Lay out one sheet of phyllo dough on a clean surface, brush it lightly with melted butter, and layer another sheet on top. Repeat this process until you have five layers.

    Fill the Pastry

    Spoon the cheese mixture onto one end of the layered phyllo dough. Fold the edges over the filling and roll it up tightly to form a log shape.

    Bake the Tyropita

    Brush the top of the rolled pastry with additional melted butter and place it on a baking sheet. Bake for 25-30 minutes, or until golden brown.

Thyme Honey Sauce Preparation

    Combine Sauce Ingredients

    In a small saucepan over low heat, combine honey, fresh thyme leaves, and lemon juice. Stir until the mixture is well blended and warmed through.

    Serve the Sauce

    Once the Tyropita is baked and slightly cooled, drizzle the thyme honey sauce over it before serving.
