Prepare the Filling

Cook the Rice
In a small pot, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let cool.

Mix the Filling
In a large bowl, combine cooked rice, ground beef, chopped onion, parsley, mint, salt, black pepper, and lemon juice. Mix thoroughly until all ingredients are well incorporated.
Prepare the Grape Leaves

Rinse the Grape Leaves
Carefully rinse the canned grape leaves under cold water to remove excess brine. Lay them flat on a clean surface.

Stuff the Grape Leaves
Take a grape leaf and place about 1 tablespoon of filling near the stem end. Fold in the sides and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.
Cooking

Arrange and Cook
Place the stuffed grape leaves seam-side down in a large pot. Add enough water to cover the leaves. Place a plate on top to keep them submerged. Bring to a simmer over medium heat, then cover and reduce heat to low. Cook for 45-60 minutes.
