    Sauté Spinach

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Spinach

    Add the fresh spinach to the skillet. Cook, stirring occasionally, until wilted, about 3-4 minutes.

    Season the Filling

    Stir in the crumbled feta, salt, black pepper, and nutmeg. Mix well and remove from heat. Set aside.

Poached Eggs

    Prepare Water

    In a medium saucepan, bring water to a gentle simmer. Add the vinegar to the water.

    Poach Eggs

    Crack each egg into a small bowl and gently slide it into the simmering water. Cook for about 4 minutes for soft yolks. Remove with a slotted spoon and drain on paper towels.

Serving

    Toast Muffins

    While the eggs are poaching, split the English muffins in half and toast them until golden brown.

    Prepare Potatoes

    In a skillet, add diced breakfast potatoes and cook until golden and crispy, about 10-12 minutes. Season with salt and pepper to taste.

    On each toasted muffin half, layer the spinach and feta filling. Top with a poached egg and garnish with chopped parsley. Serve alongside crispy breakfast potatoes.
