Filling Preparation

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped leeks and garlic, and sauté for about 3-4 minutes until soft and fragrant.

    Add Spinach

    Add the chopped spinach to the skillet with the leeks and garlic. Cook for an additional 5-7 minutes until the spinach is wilted and moisture has evaporated. Season with salt, black pepper, and dill.

    Combine Ingredients

    Remove the skillet from heat and let it cool slightly. In a large bowl, combine the spinach mixture with crumbled feta and the beaten egg. Mix until well combined.

Phyllo Assembly

    Prepare Phyllo Dough

    Preheat your oven to 180°C (350°F). On a clean surface, lay out a sheet of phyllo dough and brush it lightly with melted butter. Layer two more sheets on top, brushing each one with butter.

    Fill and Fold

    Place a generous amount of the spinach filling along one edge of the phyllo dough. Fold the sides over the filling and roll it up tightly to create a log shape. Repeat with remaining phyllo and filling.

    Bake the Spanakopita

    Place the rolled spanakopita on a baking sheet lined with parchment paper. Brush the tops with more melted butter. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.

Tzatziki Sauce Preparation

    Mix the Ingredients

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped dill. Stir until well combined.

    Refrigerate the tzatziki sauce for at least 30 minutes to let the flavors meld together.
