Preheat your oven to 425°F (220°C).

Prepare the Potatoes
Wash and peel the potatoes if desired. Cut them into wedges or cubes, ensuring they are roughly the same size for even cooking.

In a large bowl, combine the potato pieces with vegetable broth, minced garlic, dried oregano, dried thyme, salt, and black pepper. Toss until the potatoes are evenly coated.
Roasting the Potatoes

Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for about 30-35 minutes, turning halfway through, until the potatoes are golden brown and tender.

While the potatoes are roasting, prepare the ladolemono sauce by whisking together the extra virgin olive oil, fresh lemon juice, and lemon zest in a small bowl.
