    Prepare the Fillings

    In a skillet over medium heat, melt half a tablespoon of butter. Add the diced onions and sauté until translucent, about 3-4 minutes. If using, add the sliced mushrooms and cook until they are soft, about 5 minutes. Stir in the fresh spinach and cook until wilted. Remove from heat and set aside.

    Whisk the Eggs

    In a mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk together until the mixture is well combined and slightly frothy.

Cooking the Omelet

    Heat the Pan

    In a non-stick skillet, heat the remaining tablespoon of butter over medium heat until melted and bubbly.

    Cook the Eggs

    Pour the egg mixture into the skillet, swirling gently to cover the bottom of the pan evenly. Allow the eggs to cook undisturbed until the edges begin to set, about 2-3 minutes.

    Add Fillings

    Once the edges are set, add your choice of fillings (cheese, sautéed onions, mushrooms, and spinach) to one half of the omelet.

    Fold and Finish

    Carefully fold the omelet in half over the fillings. Let it cook for another 1-2 minutes until the cheese is melted and the center is cooked to your liking.

    Serve

    Gently slide the omelet onto a plate. Cut in half if desired, and serve hot.
