Preparation

    Clean the Langoustines

    Thoroughly rinse the langoustines under cold running water to remove any sand or debris. Pat them dry with a paper towel.

    Prepare the Lemon and Herbs

    Cut the lemon in half and squeeze the juice into a small bowl. Chop fresh herbs (dill or parsley) finely.

Cooking

    Boil Water

    In a large pot, bring water to a boil. Add sea salt to the boiling water.

    Cook the Langoustines

    Once the water is boiling, add the langoustines. Cook for about 3-5 minutes or until they turn a bright orange color.

    Drain and Cool

    Using a slotted spoon, remove the langoustines and place them in a bowl of ice water to stop cooking. Drain after 2 minutes.

    Prepare the Dressing

    In a small bowl, mix the olive oil, lemon juice, and chopped herbs together to create a dressing.

    Sauté Optional Garnish

    If using, melt the butter in a pan over medium heat. Add minced garlic and sauté until fragrant (about 1-2 minutes).

    Serve

    Toss the cooled langoustines with the dressing and serve immediately. If using garlic butter, drizzle it over the langoustines before serving.
