Lamb Shank Preparation

    Season the Lamb

    Rub the lamb shanks with salt and black pepper, ensuring they are well coated.

    Sear the Lamb

    In a large Dutch oven, heat olive oil over medium-high heat. Add the lamb shanks and sear on all sides until browned, about 5-7 minutes. Remove from pot and set aside.

    Sauté the Aromatics

    In the same pot, add minced garlic, diced onion, chopped carrots, and diced celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Liquids and Herbs

    Return the lamb shanks to the pot. Add chicken broth, rosemary, harissa paste, and saffron threads. Bring to a simmer.

    Braised Cooking

    Cover the pot and reduce the heat to low. Allow to braise for 2-2.5 hours, until the lamb is tender and falls off the bone.

Lima Beans Preparation

    Soak the Lima Beans

    Rinse the dried lima beans under cold water. Soak them in a bowl of water for at least 4 hours or overnight for best results.

    Cook the Lima Beans

    In a pot, combine drained lima beans with 4 cups of fresh water. Bring to a boil, then reduce heat and simmer until tender, about 30-40 minutes. Drain and set aside.

Escarole Preparation

    Prepare the Escarole

    Wash the escarole thoroughly to remove any dirt or grit. Tear into bite-sized pieces.

    Dress the Escarole

    In a bowl, whisk together lemon juice, olive oil, salt, and black pepper. Toss the escarole in the dressing until evenly coated.
