Method

Preparation

  1. 1

    Prepare the Marinade

In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined.

  2. 2

    Marinate the Fish

Place the Gulf Red Snapper fillets in a shallow dish and pour the marinade over the fish. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 4

    Prepare the Vegetables

Toss the trimmed asparagus and halved cherry tomatoes with a little olive oil, salt, and pepper in a bowl.

  3. 5

    Grill the Fish

Remove the fish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

  4. 6

    Grill the Vegetables

At the same time, place the asparagus and cherry tomatoes on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once cooked, carefully remove the fish and vegetables from the grill. Place the fish on a serving platter alongside the grilled vegetables.

  2. 8

    Garnish and Serve

Garnish with lemon wedges and sprinkle fresh parsley over the top. Serve immediately while hot.
