Method

For the Grilled King Salmon

    Marinate the Salmon

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place it on the grill skin-side down. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

For the Sugar Snap Peas

    Prepare the Peas

    In a saucepan, bring water to a boil. Add the sugar snap peas and cook for about 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process.

    Sauté the Peas

    In a skillet, melt the butter over medium heat. Add the cooked sugar snap peas and season with salt. Sauté for 2-3 minutes until heated through.

For the Fava Bean Puree

    Cook the Fava Beans

    In a pot, bring salted water to a boil. Add the fava beans and cook for 2-3 minutes until tender. Drain and rinse under cold water.

    Blend the Puree

    In a food processor, combine the cooked fava beans, minced garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy.

For the Caper Pinenut Raisin Tapenade

    Prepare the Tapenade

    In a small bowl, combine the capers, toasted pine nuts, raisins, olive oil, and lemon zest. Mix well and season with salt to taste.
