Preparing the Chicken

    Marinate the Chicken

    In a bowl, mix olive oil, Aleppo chili flakes, chopped rosemary, honey, salt, and black pepper to create the marinade. Coat the halved chicken with the marinade thoroughly. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.

    Preheat Grill

    Preheat your grill to medium-high heat.

Making the Briam

    Prepare the Vegetables

    In a large baking dish, combine zucchini, potatoes, bell pepper, onion, and tomatoes. Drizzle with olive oil, then season with salt and black pepper. Toss to coat the vegetables evenly.

    Roast the Vegetables

    Preheat the oven to 400°F (200°C). Bake the dish for 30-40 minutes or until the vegetables are tender and golden, stirring occasionally.

Grilling the Chicken

    Grill the Chicken

    Remove the chicken from the marinade and place it skin-side down on the hot grill. Grill for about 15-20 minutes, then flip and grill for another 15-20 minutes or until the internal temperature reaches 165°F (75°C).

    Once cooked, remove the chicken from the grill and let it rest for 5-10 minutes before serving.

Preparing the Feta Topping

    Mix Feta Topping

    In a bowl, combine crumbled feta cheese, chopped parsley, olive oil, and black pepper. Mix gently until well combined.

Serving

    Plate the Dish

    Serve the grilled chicken alongside the roasted briam. Top the chicken with the feta mixture and garnish with extra parsley if desired.
