Prepare the Filling

Cook the Rice
In a pot, cook the rice according to package instructions, then set aside to cool.

Mix the Filling
In a large bowl, combine the cooked rice, sautéed onion and garlic, ground beef, fine herbs, salt, black pepper, and lemon juice. Mix well until all ingredients are thoroughly combined.

Prepare for Wrapping
Lay a grape leaf, vein side up, on a clean surface or cutting board. Place about 2 tablespoons of the filling at the base of the leaf.

Wrap the Grape Leaves
Fold the sides of the leaf over the filling, then roll it up from the base to the tip, tucking in the sides as you go. Repeat this process until all filling is used.
Cooking the Grape Leaves

Arrange the Rolls
In a large pot, arrange the grape leaves seam side down in a single layer, packing them tightly together.

Add Liquid
Pour enough water to cover the rolls, and add an additional tablespoon of lemon juice for flavor. Place a plate on top to keep the rolls submerged.

Simmer
Bring to a gentle simmer over medium heat. Cover the pot and let it cook for about 45 minutes to 1 hour, or until the rice and meat are cooked through.
