Prepare the Cheese
Cut the Kafalograviera cheese into thick slices, about 1 inch each.

Coat the Cheese
In three separate bowls, place flour in one, beaten eggs in the second, and breadcrumbs mixed with salt, black pepper, and dried oregano in the third. Dip each slice of cheese first in flour, then in eggs, and finally coat it with the breadcrumb mixture.

Fry the Cheese
In a large skillet, heat the olive oil over medium heat. Once the oil is hot, carefully add the coated cheese slices and fry until golden brown on both sides, about 2-3 minutes per side. Remove and place on paper towels to drain excess oil.
Tomato Sauce Preparation

Make the Sauce
In a small saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Simmer the Sauce
Add the tomato sauce to the saucepan. Season with salt and black pepper to taste. Let it simmer for about 5-7 minutes, stirring occasionally.

Finish the Sauce
Stir in the chopped fresh basil and remove from heat.
