Preparing the Calamari

Clean the Calamari
Begin by cleaning the fresh calamari. Remove the head, innards, and the quill. Rinse under cold water and slice the body into rings.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Bread the Calamari
Dip each calamari ring into the wet mixture, then into the dry mixture, coating evenly.

Fry the Calamari
Carefully place the breaded calamari rings into the hot oil in batches. Fry for 2-3 minutes until golden brown. Use a slotted spoon to remove and drain on paper towels.
Making the Marinara Sauce

Simmer the Sauce
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Stir well and bring to a simmer. Cook for about 15-20 minutes, allowing the flavors to meld.

Stir in the fresh basil just before serving, and adjust the seasoning if needed.
