Chocolate Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl over simmering water, melt the semisweet chocolate chips, stirring occasionally until smooth. Remove from heat and let cool slightly.

    Whip the Cream

    In a separate bowl, whip 300 ml of heavy cream until soft peaks form. Be careful not to overwhip.

    Separate the Eggs

    Separate the egg yolks from the egg whites. Place the yolks in a medium bowl and the whites in a separate clean bowl.

    Combine Egg Yolks and Sugar

    Add the granulated sugar, vanilla extract, and a pinch of salt to the egg yolks. Whisk until light and creamy.

    Mix Chocolate with Egg Yolks

    Gradually fold the melted chocolate into the egg yolk mixture until fully combined.

    Beat Egg Whites

    Using a clean electric mixer, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture until no white streaks remain.

    Fold in Whipped Cream

    Carefully fold the whipped cream into the chocolate mixture in three additions, ensuring not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

Whipped Cream Topping Preparation

    Whip the Cream

    In a mixing bowl, whip 150 ml of heavy cream with the powdered sugar and vanilla extract until soft peaks form.

    Once the mousse is set, top each serving with a dollop of whipped cream before serving.
