Method

Steak Preparation

  1. 1

    Prep the Steak

Remove the Black Angus beef strip steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking to ensure even cooking.

  2. 2

    Season the Steak

Rub the steaks with olive oil, then season generously with salt and black pepper on both sides. Set aside.

Cooking the Steak

  1. 3

    Preheat the Pan

Heat a heavy skillet or grill pan over high heat until it is smoking hot.

  2. 4

    Sear the Steaks

Add the steaks to the hot skillet and sear for about 4-5 minutes on one side without moving them. This will create a nice crust.

  3. 5

    Flip and Add Aromatics

Flip the steaks over and add garlic cloves and rosemary to the pan. Cook for another 4-5 minutes for medium-rare, or adjust time for desired doneness.

  4. 6

    Baste the Steaks

Tilt the pan slightly and use a spoon to baste the steaks with the melted fat and juices for enhanced flavor.

  5. 7

    Rest the Steaks

Once cooked to your liking, remove the steaks from the pan and let them rest on a cutting board for about 5 minutes before slicing.

Preparing the Asparagus

  1. 8

    Cook the Asparagus

While the steaks are resting, bring a pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes until bright green and tender-crisp.

  2. 9

    Sauté the Asparagus

Drain the asparagus and return to the pan. Add butter and sauté for an additional 2 minutes. Squeeze fresh lemon juice over the asparagus before serving.

Serving

  1. 10

    Plate the Dish

Slice the rested steaks against the grain and serve alongside the sautéed asparagus, garnished with additional lemon wedges if desired.
