Method

Preparing the Pork Tenderloin

  1. 1

    Marinate the Pork

In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and balsamic vinegar. Rub this mixture all over the pork tenderloin, ensuring it's well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

  2. 2

    Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking dish with foil for easier cleanup.

  3. 3

    Sear the Pork

Remove the pork from the marinade, allowing excess to drip off. In a large, oven-safe skillet over medium-high heat, sear the tenderloin on all sides until browned, about 3-4 minutes per side.

Making the Glaze and Roasting

  1. 4

    Prepare the Glaze

In a small bowl, whisk together honey, balsamic vinegar, and Dijon mustard until smooth.

  2. 5

    Apply the Glaze

Once the pork is seared, brush the glaze over the tenderloin generously.

  3. 6

    Roast the Pork

Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

  4. 7

    Rest and Slice

Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
