Lamb Preparation

Method

Lamb Preparation

  1. 1

    Prepare the Marinade

In a bowl, mix together minced garlic, chopped rosemary, olive oil, salt, and black pepper to create a marinade for the lamb loin.

  2. 2

    Marinate the Lamb

Rub the marinade all over the lamb loin, ensuring it is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for best flavor.

  3. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C) while the lamb is marinating.

  4. 4

    Roast the Lamb

Place the marinated lamb loin on a roasting rack in a baking dish. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 145°F (63°C).

  5. 5

    Rest the Lamb

Remove the lamb from the oven and let it rest for 10 minutes before slicing.

Vegetable Side

  1. 6

    Prepare the Vegetables

While the lamb is roasting, prepare the asparagus and cherry tomatoes. In a large bowl, combine trimmed asparagus and halved cherry tomatoes.

  2. 7

    Dress the Vegetables

Drizzle the vegetables with balsamic vinegar, olive oil, salt, and black pepper. Toss to coat evenly.

  3. 8

    Roast the Vegetables

When there are about 10 minutes left for the lamb, spread the dressed vegetables on a baking sheet and roast them in the oven alongside the lamb for 10-12 minutes, until tender.

  4. 9

    Serve

Slice the rested lamb loin and serve it alongside the roasted vegetables.
