Preparation of Fish

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and black pepper until well combined.

    Marinate the Bronzino

    Place the cleaned bronzino on a large plate or a shallow dish. Pour the marinade over the fish, making sure to coat it well, including the cavity. Let it marinate for at least 30 minutes at room temperature.

Grilling and Serving

    Prepare the Grill

    Preheat your grill to medium-high heat. If using charcoal, ensure the coals are ashed over. If using a gas grill, allow it to heat for about 10-15 minutes.

    Prepare the Vegetables

    While the grill is heating, toss the halved cherry tomatoes, sliced zucchini, and sliced red onion in a little olive oil, salt, and pepper to taste. Set aside.

    Grill the Bronzino

    Once the grill is hot, place the bronzino directly on the grill. Grill for about 6-8 minutes on one side, then gently flip the fish using a spatula and grill for another 6-8 minutes on the other side, until it is cooked through and flakes easily with a fork.

    Grill the Vegetables

    Add the prepared vegetables to the grill alongside the bronzino during the last 5-7 minutes of cooking. Grill until the vegetables are tender and have grill marks.

    Serve

    Once cooked, remove the bronzino and vegetables from the grill. Serve the bronzino hot, garnished with slices of lemon and alongside the grilled vegetables.
