Measure and combine
In a cocktail shaker or mixing glass, pour 4 oz passion fruit puree, 1 oz fresh lime juice, 2 oz sake, and 0.5 oz simple syrup.

Add mint for flavor
Add about 8–10 fresh mint leaves to the shaker. Reserve a few whole leaves for garnish.

Muddle gently
Gently muddle the mint leaves with the liquid ingredients just enough to release the mint oils and aromatics without shredding the leaves (6–8 light presses). Over-muddling makes the drink bitter.

Add ice and chill
Fill the shaker halfway with ice (about 1 cup crushed or cubed). Secure the lid and shake vigorously for 8–12 seconds to chill and slightly dilute.
Assemble & Finish

Strain into glass
Fill a highball or Collins glass with fresh ice (crushed preferred). Double-strain the shaken mixture into the glass to remove mint bits and seeds, or use a fine strainer if you want a silky texture.

Garnish
Garnish with a reserved mint sprig, a lime wedge on the rim, and 1 tablespoon of passion fruit pulp/seeds floated on top if using. Lightly slap the mint sprig between your palms before garnishing to release aroma.

Serve immediately with a straw and optional cocktail pick for the lime wedge.
