Tostones Preparation

Peel and Slice Plantains
Peel the green plantains by cutting off both ends and making a shallow slit along the length of the plantain. Remove the skin and slice each plantain into 1-inch thick pieces.

First Fry
In a large skillet, heat the vegetable oil over medium heat. Once the oil is hot, add the plantain slices in batches and fry for about 3-4 minutes on each side until they are lightly golden but not fully cooked.

Flatten Plantains
Remove the fried plantains from the oil and place them on a cutting board. Use the bottom of a glass or a tostonera (a plantain press) to flatten each piece to about half an inch thick.

Second Fry
Return the flattened plantains to the hot oil and fry them again for another 2-3 minutes on each side until they are golden brown and crispy. Drain on paper towels and season with salt while still hot.
Aji Verde Sauce Preparation

Blend Ingredients
In a blender, combine the fresh cilantro, jalapeño pepper (seeded for less heat), garlic cloves, lime juice, olive oil, and salt.

Adjust Consistency
Blend until smooth. If the sauce is too thick, add a little water to achieve your desired consistency. Taste and adjust seasoning if necessary.

Serve
Transfer the sauce to a serving dish and serve alongside the crispy tostones.
