Brewing Process

1. Prepare the Mash

In a large pot, heat 1000 ml of water to about 70°C (158°F). Add 200 g of Pilsner malt and 100 g of corn to the pot. Stir well to combine and let it steep for 60 minutes, maintaining the temperature.

2. Sparging

After the mash is complete, sparge the grains by rinsing them with additional hot water (around 70°C) to extract as much sugar as possible. Collect the wort in a clean fermentation vessel.

3. Boiling

Bring the collected wort to a boil. Once boiling, add 20 g of hops and continue boiling for 60 minutes. This will impart bitterness and aroma to the beer.

4. Cooling the Wort

After boiling, cool the wort rapidly using an immersion chiller or by placing the pot in an ice bath until it reaches room temperature.

5. Fermentation

Transfer the cooled wort to a clean fermentation vessel. Add 10 g of yeast and stir gently. Seal the vessel with an airlock and place it in a dark, cool place (around 20°C or 68°F) for fermentation, which should take about 1-2 weeks.

6. Bottling

Once fermentation is complete, dissolve 5 g of sugar in a small amount of water and add it to the beer to help carbonate it. Carefully transfer the beer into clean bottles, leaving some space at the top. Cap the bottles and let them condition at room temperature for another 1-2 weeks.

7. Optional Flavoring

For added flavor, you can add 1 tsp of lime zest and 1 tsp of coriander during the boiling step or at the beginning of fermentation.

8. Chilling and Serving

Once the conditioning period is over, chill the bottles in the refrigerator. Serve cold in a glass and enjoy your homemade Colombian Cerveza!
