Squash Preparation

Roasting the Kabocha Squash
Preheat your oven to 400°F (200°C). Cut the kabocha squash in half, scoop out the seeds, and slice into wedges. In a mixing bowl, toss the squash wedges with olive oil, ground coffee, salt, and black pepper until evenly coated.

Bake the Squash
Arrange the squash wedges in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized. Flip halfway through for even cooking.
Beets Preparation

Roasting the Beets
While the squash is roasting, prepare the beets. Wrap each beet in aluminum foil with a drizzle of olive oil, salt, and black pepper. Place the wrapped beets on a baking sheet and roast in the oven for 45-60 minutes, or until fork-tender.

Peeling the Beets
Once the beets are cooked, let them cool slightly before peeling off the skins. Cut into wedges or cubes and set aside.
Salad Assembly

Prepare the Salad Base
In a large salad bowl, add the frisée lettuce as the base. Top with the roasted kabocha squash and roasted beets.

Add Burrata and Pepitas
Tear the burrata cheese into pieces and distribute it evenly over the salad. Sprinkle the spiced pepitas on top for added crunch and flavor.
Honey Vinaigrette

Mix the Vinaigrette
In a small bowl or jar, whisk together honey, apple cider vinegar, olive oil, salt, and black pepper until well combined. Adjust seasoning if necessary.

Drizzle the honey vinaigrette over the salad just before serving. Toss gently to coat all ingredients evenly.
