Method

Prepare Sofrito

    Roast the Ingredients

    Preheat the oven to 400°F (200°C). In a baking dish, combine the tomatoes, onion, bell pepper, and garlic. Drizzle with olive oil, and season with cumin, salt, and black pepper. Toss to combine.

    Bake

    Roast in the oven for 30-35 minutes or until the vegetables are soft and caramelized. Stir halfway through.

    Blend

    Once roasted, let the mixture cool slightly, then blend until smooth. Set aside.

Prepare Wagyu Tartare

    Prep the Beef

    Finely chop the Wagyu beef and place it in a mixing bowl.

    Combine Ingredients

    Add the blended sofrito, diced manchego cheese, finely chopped fresno peppers, confit garlic, lemon juice, and capers to the beef. Season with salt and black pepper to taste.

    Mix

    Gently mix all the ingredients until well combined. Form into a small mound and set aside.

Grill Cuban Bread

    Prepare the Bread

    Slice the Cuban bread loaf into halves or quarters, depending on serving size.

    Brush with Olive Oil

    Brush the cut sides of the bread with olive oil.

    Grill

    Heat a grill or grill pan over medium heat. Grill the bread for 2-3 minutes on each side until golden and crispy.
