Mustard Mojo Marinade

    Prepare the Marinade

    In a blender, combine garlic, cilantro, lime juice, Dijon mustard, olive oil, ground cumin, oregano, and red pepper flakes. Blend until smooth.

    Marinate the Pork

    Rub the pork shoulder with salt and black pepper. Place the pork in a large bowl or resealable bag and pour the mustard mojo marinade over it. Ensure the pork is well-coated. Marinate in the refrigerator for at least 4 hours or ideally overnight.

Cooking

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Roast the Pork

    Place the marinated pork shoulder in a roasting pan and cover it with aluminum foil. Roast in the preheated oven for about 4-5 hours, or until the meat is tender and easily pulls apart.

    Rest the Meat

    Once cooked, remove the pork from the oven and let it rest for 20-30 minutes before slicing.

Serving

    Slice and Serve

    After resting, slice the pork shoulder against the grain and serve with additional mustard mojo sauce if desired.
