    Prepare the Shrimp

    In a medium pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and immediately place the shrimp in a bowl of ice water to stop the cooking process. Once cooled, drain again and chop the shrimp into bite-sized pieces.

    In a large bowl, combine the cooked shrimp with lime juice. Let it marinate for 15-20 minutes. The lime juice will continue to ‘cook’ the shrimp.

    Add the finely chopped red onion, diced tomatoes, cucumber, avocado, and chopped cilantro to the bowl with the marinated shrimp. If desired, add the finely chopped jalapeño for a spicy kick.

    Drizzle olive oil over the mixture, then season with salt and black pepper. Toss everything gently to combine without mashing the avocado.
