Prepare the Toast Base

    Toast the Bread

    Preheat a skillet over medium heat. Brush both sides of the sourdough bread slices with olive oil. Place the bread in the skillet and toast each side until golden brown and crispy, about 3-4 minutes per side. Remove from heat and set aside.

Cook the Shrimp

    Sauté the Shrimp

    In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, paprika, lemon juice, salt, and black pepper. Cook for 3-4 minutes, or until the shrimp are pink and opaque. Remove from heat.

Prepare the Avocado Spread

    Mash the Avocado

    In a bowl, scoop out the flesh of the ripe avocado. Add lime juice, salt to taste, and red pepper flakes if desired. Mash with a fork until creamy but still slightly chunky.

Assemble the Toast

    Layer the Ingredients

    Spread a generous layer of the avocado mixture on each slice of toasted bread. Top with the sautéed shrimp and then add pickled watermelon rind pieces. Garnish with chopped fresh cilantro.
