Method

Prepare the Ribeye Steak

    Season the Steak

    Rub the 14 oz ribeye steak with duck fat, then generously coat it with the spiced coffee rub. Let it sit at room temperature for about 30 minutes to allow the flavors to penetrate.

    Cook the Steak

    In a hot cast-iron skillet, sear the steak over medium-high heat for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

Make the Red Wine Bordelaise

    Sauté Shallots

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped shallots and sauté until they are translucent, about 2-3 minutes.

    Deglaze with Red Wine

    Pour in 1 cup of red wine and bring to a boil. Reduce the mixture by half.

    Add Beef Stock and Thyme

    Stir in 1 cup of beef stock and 1 teaspoon of fresh thyme. Simmer the sauce until it thickens, about 10-15 minutes. Strain the sauce and keep warm.

Fry the Eggs

    Heat Butter

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat.

    Fry the Eggs

    Crack the 2 large eggs into the skillet and cook until the whites are set but the yolks remain runny, about 2-3 minutes. Season with salt.

Cook the White Rice

    Rinse Rice

    Rinse 1 cup of white rice under cold water until the water runs clear.

    Cook Rice

    In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.

Prepare the Black Beans

    Heat Black Beans

    In a small saucepan, pour in 1 can of black beans (drained and rinsed). Add 1 teaspoon of cumin, 1 teaspoon of garlic powder, and salt to taste.

    Simmer Beans

    Heat the mixture over medium heat until warmed through, about 5-7 minutes.
