Method
Preparation
- 1
Peel the Plantains
Using a sharp knife, carefully cut off the ends of the green plantains. Make a shallow cut along the length of each plantain and gently peel away the skin. Discard the skin.
- 2
Slice the Plantains
Using a mandoline slicer or a sharp knife, slice the plantains into thin, even slices (about 1/8 inch thick). The thinner the slices, the crispier the chips will be.
Cooking
- 3
Heat the Oil
In a large, deep frying pan or pot, pour in the vegetable oil and heat it over medium-high heat until it reaches about 350°F (175°C). You can test if the oil is ready by dropping in a small piece of plantain; it should sizzle immediately.
- 4
Fry the Plantain Slices
Carefully add a handful of plantain slices to the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes, or until they turn golden brown and crispy.
- 5
Drain the Chips
Using a slotted spoon, remove the fried plantain chips from the oil and place them on a plate lined with paper towels to absorb excess oil. Sprinkle with salt immediately while they are still hot.
Seasoning (Optional)
- 6
Add Seasoning
If desired, while the chips are still warm, sprinkle paprika, garlic powder, or cayenne pepper over the chips for additional flavor. Toss to ensure even coating.
Serving
- 7
Serve
Once all the plantain slices are fried and seasoned, serve the chips warm as a delicious snack or appetizer. Enjoy!
