Pastry Dough

Method

Making the Pastry Dough

  1. 1

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, sugar, and salt until well combined.

  2. 2

    Cut in Butter

Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the cold water, mixing until the dough just comes together. Avoid overmixing.

  4. 4

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Preparing the Fillings

  1. 5

    Make Cheese Filling

In a bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and mix until well combined.

  2. 6

    Prepare Fruit Filling

In another bowl, mix the fruit preserves with cinnamon until well blended.

  3. 7

    Combine Chocolate Filling

Simply measure out the chocolate chips as a filling option.

Assembling the Pastries

  1. 8

    Roll Out Dough

On a floured surface, roll out the chilled pastry dough to about 1/8 inch thickness.

  2. 9

    Cut the Pastries

Use a round cutter to cut out circles of dough. You can also use a square cutter for different shapes.

  3. 10

    Fill the Pastries

Place a small spoonful of your filling of choice (cream cheese, fruit, or chocolate) in the center of each dough circle.

  4. 11

    Seal the Pastries

Fold the dough over the filling to create a half-moon shape. Press the edges to seal and crimp with a fork.

  5. 12

    Apply Egg Wash

Brush the tops of the pastries with the egg wash for a golden color.

  6. 13

    Sprinkle Topping

Sprinkle sesame seeds or sugar on top of the pastries as desired.

Baking the Pastries

  1. 14

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 15

    Bake the Pastries

Place the pastries on a lined baking sheet and bake for 20-25 minutes or until golden brown.

  3. 16

    Cool and Serve

Allow the pastries to cool on a wire rack for a few minutes before serving.
