Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

    Mix Dough Ingredients

    In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

    Knead the Dough

    Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Filling Preparation

    Sauté Vegetables

    In a pan over medium heat, add 2 tbs of olive oil. Once hot, add the chopped onion, green bell pepper, and garlic. Sauté until softened, about 5 minutes.

    Add Chicken and Spices

    Stir in the cooked shredded chicken, cumin, paprika, salt, and pepper. Cook for another 5 minutes until heated through. Remove from heat and let cool.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Roll Out Dough

    Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a rectangle on a floured surface.

    Fill the Dough

    Place a portion of the chicken filling on one half of the rectangle, then fold the other half over the filling. Pinch the edges to seal.

    Prepare Egg Wash

    In a small bowl, whisk together the egg and milk. Brush this mixture over the top of each pastel.

    Bake

    Place the pastels on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
